Ingredients
Chicken (medium cut pieces) 1 kg
Onion 1 (large)
Dried plums 8
Raisins 2 tbsp
Olives 10
Crushed garlic cloves 4
Olive oil 6 tbsp
Tomato 1 (large)
Green chilli 2
Fresh coriander 2 tbsp
Water half cup
Sugar 2 tbsp
Cinnamon powder 1 tbsp
Salt 1 tsp
Coriander powder 1 tbsp
Turmeric powder 1 tsp
Paprika powder 1 tsp
Black pepper powder 1 tsp
Ginger powder 1 tsp
Cumin powder 1 tsp
Red chilli powder 1 tsp
Directions
1. Take a mud pot or normal pot, add in olive oil and onions and fry for 4 minutes until they are soft. Now add garlic and sauté for another 2 minutes.
2. Add chicken and all the spices, and give a good mix. Add tomato slices, olives, green chilli and fresh coriander. Cover it and let it cook on low heat for 30 minutes. Do not
add water as it will cook in its own juices.
3. Take a small saucepan add water, sugar and cinnamon powder. When it starts simmering add plums and raisins and cook on medium low heat until it becomes thick but runny in consistency.
4. Now check the tagine. Give it a good mix and smash the tomato slices and cook for another 5 minutes on high heat until the water dries and oil comes out.
5. Add plums and raisins sauce on top. Enjoy it with tandoori naans or rice. HH
